As we enter a second winter without heat in our home, I cherish anything that produces warmth. Most of all, I look for reasons to turn the oven on and stay in the kitchen — the longer the better. , the author behind the blog , as well as the books and , has given me 40 more minutes to cuddle up next to the stove with her recipe for Roasted Maple Acorn Squash with Crispy Sage and Pomegranate Seeds. I’ve bookmarked this page for this weekend, and have a feeling this recipe will be a frequent guest on our winter menu. —
Why Adrianna loves this recipe: I love this recipe because it is easy as they come, vegetarian-friendly and colorful! When making the recipes for , I wanted to create simple recipes that were equally as fun to color. The pops of orange from the squash, deep, olive-like green from the sage and bright pink from the pomegranate, make it a dish that’s both fun to color in and of course, eat!

Roasted Maple Acorn Squash with Crispy Sage and Pomegranate Seeds
— 1/4 cup olive oil, divided
— 2 tablespoons maple syrup
— 1 acorn squash, halved, seeds removed, and cut into wedges
— 6 fresh sage leaves
— 2 tablespoons pomegranate seeds
1. Preheat oven to 350 degrees F. Line a baking sheet with parchment.
2. In a small bowl, whisk together 2 tablespoons oil and maple syrup. Brush squash wedges on both sides with half of the syrup mixture. Sprinkle liberally with salt. Place on the baking sheet and roast for 40 minutes, or until tender when poked with a fork. Brush the squash again with remaining olive oil/maple syrup mixture.
3. In a small skillet over medium-high, warm remaining 2 tablespoons oil. Fry the sage leaves until crispy. Transfer to a bed of paper towels and top with a few pinches of salt. Garnish the squash with the sage leaves and pomegranate seeds.
